Fake Baked Rotini

When I was in high school our cafeteria had daily specials, which were usually not-so-special, except the baked rotini. Now that was delicious and really easy to figure out myself. It’s been a few years and my version has evolved to suit me even better — meaning it is much quicker to make and slightly healthier. I have dubbed it “Fake-Baked Rotini”, as it is actually broiled. Perfect for lazy cooks like myself! I apologize for my lack of measurements, but really this is so easy that measurements are unnecessary.

Ingredients:
-Catelli Healthy Harvest Rotini (or rotini of your choice)
-Your favourite pasta sauce
-Parmesan cheese powder
-Kraft 4 Cheese Italiano shredded cheese (or plain old mozzarella)
Directions:
1.To find how much you will need, line the bottom of your casserole dish with two layers of dry rotini.

2. Fill a pot with water (amount depends on how much pasta you are making) and bring to a boil. Pour rotini in and cook to desired tenderness (Healthy Harvest rotini takes 13 minutes). Drain and put back into pot.
3. Pour pasta sauce and parmesan cheese powder over cooked rotini, stir until evenly coated.

4. Scoop into casserole dish and top with more sauce.


5. Cover with desired amount of cheese.

6. Place in centre of oven and broil at 400°F (205°C) until cheese is slightly browned. (Watch closely, it’s easy to burn… as you can see below…)

7. Serve and enjoy!
Tip:
-If you are cooking this for just yourself and possibly one other, personal sized bakeware (like CorningWare French White pop-ins) are a great idea. Just make sure to use a baking sheet underneath while broiling!
-If you use a glass pot to cook your pasta, you can use it to broil it as well. As long as it is oven friendly, there’s no need to dirty another dish
Prairies

The other day my friend Sarah and I went on a bit of an adventure in the prairies, which was a mixture of all sorts of things. Scary.. cold.. windy.. and so much fun!!! First off, I hadn’t thought much beyond “I want to take some prairie pictures” so we had to find a good spot. We turned down a random road which led us to a somewhat creepy dirt road. It had an eeriness to it, but I thought it was pretty. So we got out of the car and began walking…



I suppose it would make more sense to call it a sand road instead of dirt.

We found some creepy stuff that I didn’t take pictures of, but I’m sure this look of terror had something to do with it.



Is it just me, or do “no trespassing” signs make people want to trespass all the more? Not that we did.

So that was our adventure! After that we went for some much-needed hot chocolate — and it was delicious!

Boys

Remember these boys? I took these photos near the end of summer, mainly for my mom because she wouldn’t be babysitting them anymore. I left them so long, because I wasn’t sure which ones to pick or whether or not I should edit them. Today I finally came to a decision — I picked whichever ones I wanted to, without worrying about doing too many and I didn’t retouch them, because I think they have more impact with the scratches that boys seem to always have. Besides, the messy boyness goes so well with the wacky faces!













These pictures remind me of why I thought boys were yucky when I was little and also why they made me laugh.

Ghost Town – Last Post of the Year!

Sorry this post is a day late! For some reason I thought yesterday was Thursday and when I remembered that it was actually Friday, it was already very late (this is what happens when I don’t open my day planner for a couple of days). Anyway, on with the post… the other day I went on a photo excursion with my dog and I wound up with more decent shots than I thought. It was light out when I left the house and dark by the time I got home, so things got creepier as I walked along. Near the end of my adventure, I cut through the park in my neighbourhood and spent far too much time darting around, shooting things that had changed drastically since I was a child. A part of me actually wanted to get the heck out of there, simply because I am a scaredy cat and I was losing feeling in my fingers, but I wanted to push myself more. And while I don’t think I got amazing photos out of it (like I said, they are just decent), I’m glad I did it!

It started out like this. Thank you, person who didn’t get rid of your pumpkin after Halloween and let it rot on the other side of the fence. “Out of sight, out of mind,” right?

This made me giggle a little. I like that the sky looks blue, but it was actually overcast.

I like alleys for some reason.

I think this was the first shot I took at the park…

Some might think that a ghost was posing for me. When I think that, I get the heebie-jeebies.

I can’t get over how creepy the spray park is in the winter. (I don’t actually like this shot, but its creepiness intrigues me)

This thing without a face is even scarier than before (and trust me it was terrifying.. That is, if you don’t care for clowns that projectile vomit on you… and what is with sunflowers having clown faces anyway?)

Hana had “ice on her moustache and ice on her beard” so I had to take a picture. She wouldn’t cooperate though.

Lastly, I went over to the little picnic area and this was the only shot I sort-of liked.
And by the way… HAPPY NEW YEAR! See you in 2012!
Double Rainbow

I took these photos a long time ago and I never touched them for some reason… then that double rainbow video surfaced on youtube and I decided to hold them back for a while. Well I completely forgot about them until the other day when I was going through pictures to post on my facebook page and I rediscovered them. Enough time had gone by and I like them more now than I did before, so now I am sharing them with the world! So here they are, my very own double rainbow photos…

Tried to find the end...
I messed with the contrast a little so the rainbows would show up better and I love how they turned out! I know a lot of people dislike photoshop, but I am not one of them. I do love when I don’t have to edit, but if a little contrast brings out the best in a photo, why not use it?

Heart-Shaped Lara

It’s the last day of heart-shaped photos! I’m a bit sad and a bit relieved at the same time. I edited a lot more photos than I set out to do at first, but I just couldn’t help it. Now I have the dreadful task of choosing one of each model for the series page… yikes! But I will leave that for another day, because today is Lara Gillis day!!



Lara and I grew up together and I am proud to say that 22 and a half years later, we are still friends ^-^ And in case you can’t tell by these pictures, she is crazy in an awesome way. Really, if you ever get to meet her, you are lucky!

I’ve known Chantelle most of my life, and she is awesome! So naturally, today is Chantelle day! A part of me wishes I had done these photos indoors, but another part of me loves the colours and I think they really suit her personality. What do you think — do you prefer the indoor pictures or the sunny outdoor ones?




Just one more week of hearts and then maybe I can pick some favourites for the series page!
